This chia pudding checks all the boxes: healthy, satisfying, quick to prepare, and extra delicious with the addition of almond brittle. (Ask your local Orthodox rabbi about using chia seeds on Passover.)

Ingredients
1 cup canned coconut milk, stirred
2 tablespoons maple syrup
4 tablespoons chia seeds
2 to 3 tablespoons Gefen Almond Brittle
dehydrated strawberries
sliced grapes

Directions
In a bowl, mix coconut milk, maple syrup, and chia seeds. Let sit on the counter or in the fridge for one to two hours (or longer), until set and not jiggly.
Top with almond brittle, strawberries, and grapes.
