Colorful Marinated SaladAdd To My Recipes
2 cups frozen broccoli, thawed and drained
1 large zucchini, unpeeled, cut lengthwise into quarters and sliced
1 yellow pepper, cut in strips
2 carrots, peeled and thinly sliced
1 red onion, thinly sliced
2/3 cup sugar
2/3 cup vinegar
1/4 cup Gefen Cottonseed Oil
juice of 1/2 lemon
1/4 cup water
pinch of Gefen Table Salt, or to taste
Combine vegetables in a large container with a lid.
Blend dressing ingredients in a separate bowl and pour over vegetables. Cover container and shake well. Marinate overnight.
