Garlic Baked ChickenAdd To My Recipes
1 whole chicken, cut up and cleaned
2 large heads of garlic, separated into cloves
3 stalks celery, cut into 1-inch pieces
3/4 cup dry white wine
1/4 cup Bartenura Olive Oil
3 tablespoons fresh lemon juice
2 tablespoons chopped parsley
2 tablespoons chopped fresh basil or 3/4 teaspoon dried
1/4 teaspoon Gefen Table Salt
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes, optional
1/2 teaspoon grated lemon rind
Preheat oven to 375 degrees Fahrenheit.
Arrange cleaned chicken in nine- x 13-inch baking dish, skin-side up. Sprinkle with garlic cloves and celery. Combine wine, oil, lemon juice, parsley, basil, salt, and pepper. Pour over chicken. Sprinkle lemon rind on top.
Bake, covered, for one hour. Uncover and bake 15 minutes or until chicken is tender.
Two heads of garlic may seem like a lot; don’t be tempted to use less as it gives the chicken a delicious flavor.
