Ingredients
4 Manischewitz Matzos
2 cups water
2 to 3 eggs
1 cup of raisins
1/2 cup sugar
1/8 cup cinnamon
1/4 cup Gefen Pure Vanilla Extract

Matzo Brei
Directions
Fill a large bowl with lukewarm water.
Break matzos into bite-sized pieces and place into the bowl. When the matzo becomes soft, drain the water.
In a separate bowl, beat the eggs. Add softened matzo and mix gently. Mix in raisins, sugar, cinnamon and vanilla.
Spray a frying pan or skillet with cooking spray. Pre-heat on low medium.
Pour matzo mixture into heated frying pan. Cook for five to seven minutes, then flip and cook other side for another five to seven minutes.
When lightly browned, remove from pan and serve.
Eat it plain or top with favorite jam, margarine, cream cheese or fresh berries! It is sweet and delicious either way.
