Beat egg whites until foamy. Gradually add sugar and continue beating until stiff. (If you skip this step, the kugel will still come out tasty.)
In a separate bowl, beat yolks and add rest of ingredients.
Gently fold egg whites into batter.
Bake in eight- by 10-inch or nine-inch round baking pan at 350 degrees Fahrenheit for one hour.
Variation: Omit potato starch and increase nuts to one cup.
