There are so many amazing salmon recipes out there, but it's always fun to try out something new! This recipe takes about 2 minutes to put together and yields a moist, flaky salmon with a crunchy topping that will please your palate! Be careful not to over-bake in order to keep the salmon moist.

Ingredients
four 6- to 8-ounce salmon fillets
2 tablespoons horseradish cream
1/4 cup (from 6-ounce box) Manischewitz Potato Pancake Mix
non-stick cooking spray

Directions
Preheat oven to 450 degrees Fahrenheit.
Lightly spray a baking sheet with cooking spray.
Place salmon fillets skin-side down on prepared baking sheet. Spread horseradish cream evenly over the top of each piece of salmon.
Sprinkle, and then gently press the Manischewitz Pancake Mix onto the salmon fillets so they are evenly coated.
Bake for eight to 10 minutes or until salmon is cooked through (salmon flakes with a fork.)
Serving Suggestion: Serve salmon with steamed or sautéed baby vegetables.
