Yields 72 meringue cookies
8 egg whites
1 pound Gefen Confectioners' Sugar
1 tablespoon vinegar
Preheat oven to 200 degrees Fahrenheit. Line two cookie sheets with parchment paper.
Beat egg whites until stiff.
Gradually add remaining ingredients and beat until peaks form.
Place meringue mixture in a piping bag and pipe out onto the cookie sheets. (Optional: Place a nut under each cookie.)
Bake for three hours, until kisses are no longer sticky.
