1 stick butter or margarine, melted
1 cup Gefen Roasted Almond Butter
2 teaspoons vanilla extract
2 cups Gefen Tapioca Starch
1 cup Gefen Confectioners' Sugar, plus more for dusting
1/2 teaspoon Gefen Table Salt
1/4 teaspoon Gefen Baking Powder
Tapioca Almond Cookies
In a medium bowl, mix butter, almond butter, egg, vanilla extract, tapioca flour, one cup confectioners’ sugar, salt, and baking powder until well combined.
Refrigerate dough for one hour.
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
Scoop tablespoonfuls of dough and roll into balls. Place on the prepared baking sheet.
Bake 12 minutes. Dust with confectioners’ sugar while still warm.
