Make quick, easy vegetable cutlets that taste great and are loaded with high-nutrient vegetables like cauliflower, broccoli, and carrots. Made with only a minimal amount of matzo meal, these cutlets are light on the waist.

Ingredients
1 (1-pound) package frozen California Blend vegetables
2 Gefen Potatoes, peeled and cubed
3/4 cup Manischewitz Matzo Meal
2 eggs
salt and pepper, to taste
onion powder, to taste
Gefen Cottonseed Oil, for frying
Vegetable Cutlets
Directions
Cook California Blend vegetable mix in water until tender. Drain the vegetables. Add potatoes and mash.
Add matzo meal, eggs, and spices. Mix well. Form into patties.
Fry on both sides in hot oil until golden brown.
